DMZ is short for Demilitarized Zone (or something near it). What it does is to disable firewall at that specific IP, nice tool to check firewall issues. Ubuntu does install firewall as default (called Armour or AppArmour), it's possible to disable it too.
The lower-case thing as you call it is done once when you install the server but if you add ./tolower in your start-script it convert file names (if any) every time server start.
